Our life is total chaos right now.
Seriously.
We have a 4 year old with multiple food allergies, a 2 year old that is a potty training diva and baby boy due in May taking Zumba classes at 3 a.m. My husband is on a 4-days-on, 5-days-off-4-days-0n, 1-day-off, 10-hours/day rotation with extra security jobs shoved here and there until sometime in April, when I become a Kentucky Derby widow and he can’t get off work for any of the Derby Festival events unless he’s dying. True story.
Needless to say, I’m always scouring the internet for recipes that are easy-peasy and something my kids will eat. I found a recipe for some Ranch Pork Chops, and since I now have a Homemade Ranch Seasoning recipe that is really good, I thought I’d give this one a whirl.

Slow-Cooker Ranch Chicken
serves 4
4 boneless, skinless chicken breasts
1 box of Pacific Condensed Soup, chicken or mushroom (gluten free)
1 TB Homemade Ranch Seasoning (OR one packet of that other stuff…)
1. In a slow cooker crock, stir soup and seasoning together.
2. Place the chicken on top of the sauce, and then add the lid to the slow cooker.
3. Cook on low for 5 hours or high for 3 hours, until chicken reads 160F with a meat thermometer.
I was being a good girl the night we had this, so I made mashed sweet potatoes and roasted asparagus. I couldn’t get nearly enough of the sauce, though, so I would also suggest mashed potatoes or plain noodles on the side, plus some green beans!
